We partnered with our new friends at the Monteblanco farm to get one of our favorite Co-ferment coffees we've had thus far.
Farmer, Rodrigo Sánchez, takes such a curated approach for this coffee. With an on and off again step approach of fermentation nad exposure to fruit (Blueberry in this case), Rodrigo ensures that the coffee is exposed to the microorganisms and fruits that affect the overall flavor while not being overwhelming. Over several days (and many sample pulls) the coffee is ready to be pulled, washed, and sent our way.
